Zingy Mango Salsa

Try this uber-fresh salsa in lettuce wraps, with corn chips or over shrimp tacos!

Ingredients: (Choose organic whenever possible 🙂

*1 large, ripe mango that has been peeled, pitted and cut into small  (1/4 inch) cubes

*1 medium, ripe tomato that has been diced

*1 medium cucumber that has been peeled and diced

*1/2 half of a sweet red pepper that has been seeded and diced

*2 tablespoons of red onion that has been diced

*2 tablespoons of fresh cilantro that has been chopped

*1 teaspoon (or to taste) of Chipotle chili pepper

*1 tablespoon of fresh lime juice

*2 tablespoons of fresh orange juice

*1/2 teaspoon of sea salt


Simply place each ingredient into a small bowl and toss!

This recipe makes about 2 cups of salsa.
