Quick Rye Soda Bread with Dill Butter

This quick and easy yeast-free bread can accompany almost any meal!  The dill and goat cheese butter makes it extra special 🙂

Bread Ingredients and Instructions

*Place a pizza stone on a middle oven rack and preheat to 400 degree Fahrenheit.

*Combine 2 and 1/3 cups of rye flour, 1 and 3/4 cups of unbleached bread flour, 1 and 3/4 teaspoons of baking soda, and 1 and 1/4 teaspoons of sea salt in a large bowl.

*Make a well in the center of the flour mixture and add in 2 cups of buttermilk.  Stir until all of the ingredients form into a ball of dough.

*Turn the dough onto a floured surface, add  a small amount of unbleached bread flour and knead for about 30 seconds.

*Take the pizza stone out of the oven and dust it with 1 tablespoon of unbleached flour.  Place the rounded, flattened ball of dough on the stone.  Brush the dough with 2 tablespoons of buttermilk….and then dust the dough with a bit of flour.  Slice 4 deep slashes across the top of the dough, two thirds of the way into the dough…as if you were cutting a pie into eighths.

*Bake for approximately 30 minutes on the middle rack.  Move the rack and bread up a level and bake for another 20 minutes, or until the bread makes a hollow sound when thumped 🙂  Cool on a wire rack.

Dill Butter Ingredients and Instructions

*Blend together 1/2 cup of room temperature butter, 1/3 cup of soft goat cheese, 1and 1/2 tablespoons of chopped fresh dill, 1 and 1/2 tablespoons of chopped fresh chives, and 1/4 teaspoon of sea salt.

*Slather butter on a warm piece of the rye bread.  Isn’t slather a great word?!
