Best Honey Nut Balls Ever!!

I made up a double batch of my semi-famous honey nut balls for our recent camping trip to Ohio.  I believe they were the best batch ever!  Over the years I have tweaked the original recipe to make them the tastiest and the healthiest.  They are quick and easy to put together, and they pack a wallop of healthy protein and fat nutrition!  Honey Nut Balls are a superb alternative to processed snack bars for kids of any age!

Honey Nut Balls–single batch

Ingredients (use organic whenever possible):

*1/4 cup of natural nut butter (peanut, almond, cashew)  I used a creamy almond butter from the bulk foods at Maple City Market in Goshen.

*1/2 cup of local honey

*1 teaspoon of hempseed oil   I used the Nutiva brand.  Hempseed oil has a better ratio of omega-3,6, & 9 fatty acids.

*2 tablespoons (or more) of dark chocolate chips

*1/4 cup of chopped organic walnuts

*1 cup of organic brown rice crisps.  I used the Whole Foods Market 365 brand.


*Mix the nut butter, honey, and hemp oil in a medium-sized bowl.  Add in the chocolate chips, chopped walnuts, and rice crisps.  Mix gently until the crisps are well coated.  Form the mixture into walnut-sized balls and set onto wax paper.  You can form the balls easily by coating your palms with a bit of coconut oil.  Chill for several hours before enjoying.  Keep refrigerated.  Enjoy 🙂
