Massaging Kale…..yes, you read it correctly :)

Kale can tend to be a bit on the tough side… but it is SO darn good for you!  Here’s a way to soften the kale and prep it for use in raw or cooked recipes!

Massaged Kale
Start with the common curly green kale.  Many cooks feel it has a mild, sweet flavor and works well in raw salads.  This hearty kale softens up nicely after some massaging 🙂  You will end up with a great “crunchy-soft” foundation for a variety of salads.  There are three different ways you can massage and soften your kale.  Before you begin the “massage therapy”, strip the kale leaves from the stems.  Cut the kale into ribbons or small pieces and make sure they are rinsed well.  Let the leaves dry thoroughly, blotting them with paper towels or using a salad spinner.   Place the kale in a large bowl and use one of the methods described below.

#1    Sea Salt Method:  Sprinkle 1/2 to 1 teaspoon of sea salt onto the kale.  Massage it into the leaves for 1 to 2 minutes, until the leaves soften and turn a bright green.

#2    Olive Oil Method:  Rub a small amount of organic extra-virgin olive oil onto your palms.  Massage the kale leaves for 30 to 60 seconds, until they soften and turn a bright green.

#3    Olive Oil & Lemon Method:  Drizzle a small amount of olive oil and lemon juice onto the kale.  Massage the leaves for 30 to 60 seconds, until they soften and turn bright green.

One Simple Massaged Kale Idea
*Take one bowl (8-12 ounces) of massaged kale.
*Add 2/3 cup of dried fruit of your choice.
*Add 1/2 cup of crushed toasted cashews, pecans, or walnuts.
*Drizzle 2 tablespoons of EVOO (extra-virgin olive oil) over the ingredients.
*Squeeze the juice of 1/2 to 1 lemon over the ingredients.
*Add in 1 tablespoon of pure maple syrup.
*Toss….use sea salt and pepper to taste….ENJOY!
