Marvelous Chicken Salad….Minus the Mayo!

A few years back I was searching for a tasty chicken salad recipe that didn’t contain mayonnaise.  Commercial mayo, even the best-quality out there, can sometimes upset my tummy.  I happened on a blog called “Iowa Girl Eats”….and this fantastic chicken salad made with yogurt.  You can change up the  basic ingredients as you like, but I wouldn’t mess with the dressing 🙂  The curry powder and tamari (soy sauce) give it a unique flavor that is not overtly Asian.  I’m pretty sure you’re going to love this!

Basic Chicken Salad Ingredients

*6 ounces of cubed or shredded cooked quality chicken breast

*1/3 cup of dried cranberries or raisins (or substitute with fresh apple or pear cubes)

*1/4 cup of sliced almonds (or any other nut of choice)

*2 green onions, chopped

*2 ribs of celery, chopped  (and/or chopped red bell pepper)

Dressing Ingredients

*1/2 cup plain, full-fat Greek or regular yogurt (regular yogurt will produce a thinner dressing)

*1/2 teaspoon of curry powder

*2 teaspoons of tamari (wheat-free soy sauce)

*squeeze of fresh lemon juice

*sea salt, to taste

Directions:  Combine all non-dressing ingredients in a bowl.  In a separate bowl, whisk together the dressing ingredients.  Pour dressing over chicken until all ingredients are thoroughly coated.  Chill if you like…but I rather like the flavors room temp!  Enjoy with a small green salad or bread product.
