I came across this recipe in George Mateljan’s wonderful tome of food knowledge called The World’s Healthiest Foods. It sounds kind of strange, but they are delicious! This recipe takes just a few basic ingredients, and you end up with a nutritious and filling meal.
*1 (15 oz.) can of lima beans, drained and rinsed
*2 cloves of fresh garlic, pressed
*1 tablespoon of extra-virgin olive oil
*1/4 cup of diced fresh tomato
*1/4 teaspoon each of sea salt, pepper, dried basil, dried oregano
*Optional: freshly-grated parmesan cheese for the taco filling
*4 authentically-made corn tortillas (Try La Tortilla Factory brand.)
*Heat oil and sauté the garlic. Add the lima beans and toss over a low-medium heat.
*Simultaneously……heat a drizzle of olive oil in a second pan. Warm both sides of each tortilla.
*Season the garlic and beans. Add in the diced tomatoes.
*As soon as the tomatoes are heated, turn off the burner.
*Assemble your tacos and add the grated parmesan.
