Chia Seeds…..who would have thought there was mega-nutrition in the seeds that sprouted those silly, hairy plants advertised on TV! Actually, chia seeds have been around for thousands of years. They were a revered food of the ancient Aztec and Mayan cultures. Chia seeds are packed with plant nutrients with antioxidant properties. They are also an excellent source of protein, minerals, omega-3 fatty acids, and fiber.
I buy my organic chia seeds from Nutiva…the same company where I get my high-quality coconut oil and hemp seeds. These seeds are already ground and ready to be added to yogurt, cooked cereals, and smoothies. When chia seeds are soaked in a liquid for a period of time, they hydrate into a gel. This gel can be part of a smoothie or pudding…..see the new post on my Recipes page 🙂 It can also function as a thickener in other recipes, or as an egg replacement.
So instead of turning chia seeds into a grassy coffee table decoration…….eat the seeds!
